A Few Recent Dinners

Dinner 1:
Coconut Chicken Nuggets (from www.multiplydelicious.com) with Paleo Ketchup
• Roasted carrots
• Steamed and sautéed brussels sprouts
• Organic mixed greens
Dinner 2:
• Shrimp Skillet (from Paleo Comfort Foods cookbook, by Julie and Charles Mayfield) (the only thing I changed was adding a 28oz can of diced tomatoes instead of fresh – I didn’t have any on hand – and it was very tasty!)
• Roasted asparagus
Dinner 3:
• Grass Fed burgers (seasoned with garlic pepper, sea salt, and oregano) topped with raw extra sharp cheddar cheese (Organic Valley)
• Arugula, sliced avocado, sliced tomato
• Sweet potato fries (tossed with coconut oil, sea salt and black pepper and baked at 475 for 25 – 30 minutes)
