Keep It Simple Silly!

There’s a strong tendency to be intimidated by “Paleo cooking,” but not every meal needs to land on the cover of Gourmet Magazine. Thankfully! And not every meal needs to be a time sink – keeping you from your favorite activities. In fact, just last week (amongst long crazy days) my family committed to an evening of hodgepodge, whatever’s in the fridge, salads. Well, mine and my husband’s ended up salad-like, but our kids ate everything separately. It’s always a nice break for me to not have to plan, prep and cook every dinner (although most days I enjoy it) and it’s fun to involve the whole family in creating their own “balanced” plates.


Here’s what we threw together:

• Organic mixed greens

• Bite sized organic sweet peppers

• Chopped tomatoes

• Baby carrots

• Mixed raw nuts (almonds, pecans, walnuts)

• Sliced organic herbed turkey (Applegate Farms)

• Sliced pepperoni (Applegate Farms)

• Sliced salami

• Olive oil and vinegar


As my kids would say, “easy peasy, lemon squeezy.” I owe a lot of credit to my husband, who is always reminding ME of this very concept – keeping it simple! Meat, veggies and good fats! Pulling something together with what “paleo ingredients” you have on hand can be fun, quick, and leave you feeling great.

    Love this concept! In my family, we call this a “smorgasbord” dinner. We do this at least two or three times a month. Bonus: it’s a great way to clear out the fridge!
