My Plate 10-26-12

My kids’ lunch boxes looked like this last Friday:
• Applegate Farms herbed turkey roll-ups
• cooked shrimp with salsa for dipping
• Celery with almond butter
• Raw carrot sticks
• Pistachios
• Sliced organic red pear

Breakfast:
• Pumpkin Banana Paleo Pancakes
• Leftover sautéed kale (in Ghee)
• Applegate Farms Organic bacon
• A cup of black coffee
Lunch:
• Leftover rosemary beef stew (Soups, stews or chilies often taste better to me the day after because the flavors have had more time to develop – sooooo yummy!)

Dinner:
• Paleo Chicken Pot Pie
I use the recipe from Paleo Comfort Foods (“pot of chicken pie”) with a few adjustments (such as coconut oil and ghee instead of olive oil for the topping and less broth for the filling). My oldest son ate two giant helpings:-)
