Today was the first day back to school in the new year. Back to packing school lunches and fueling my “littles” well while they charge ahead in the classroom. Here’s what landed in their lunch boxes today:
• Rolled Applegate Farms Organic ham with Organic Valley raw cheddar inside. Served over mixed organic greens and divided by black olives.
• Raw organic carrot sticks and leftover roasted asparagus (coated in coconut oil)
• Mixed fruit salad
• Plantain chips with sunflower seed butter for dipping
