This weekend we celebrated our son’s second birthday! We had a little party at our house with a few of his little friends (who all happen to live in “paleo-ish” families:-) I decided to try some cupcakes from the Make It Paleo cookbook (by Bill Staley and Hayley Mason). I went with the Chocolate Mocha cupcakes and Cream Cheese frosting (minus the ginger because I wasn’t sure how the little ones would like this flavor – although it sounds yummy to me!). Both were sweetened with pure maple syrup.
My only disappointment was that the cupcakes were overcooked. The recipe said to bake for 35 minutes on 350. I pulled them out after 28 minutes and they were overdone:( Maybe it has something to do with our high elevation? But, all in all, they were great and I’ll certainly try them again with minor adjustments.
We also had some nibbles before these treats:
– Fruit salad (with a touch of cinnamon and vanilla extract)
– Veggie tray with Walnut Red Pepper Dip (Everyday Paleo)
– Rolled deli meat platter (AppleGate Farms organic ham, chicken, and roast beef)
– Natural salami and Organic Valley Raw Cheddar cheese
– Pistacchio nuts
