Today officially felt like Spring!! And what better way to celebrate than a little tequila with lime over ice?!
I always look forward to “winter dishes” when the snow starts to fall, but I am certainly ready to welcome the bounty of fresh produce spring and summer have to offer!!! Tonight’s dinner fit the occasion and reenergized the “cook” in me.
• Grilled flap meat (very similar to flank steak for those unfamiliar with it)
• Sautéed asparagus (cooked in coconut oil, seasoned with sea salt and pepper)
• Strawberry Avocado Salad (topped with olive oil and balsamic vinegar)
