Today included two meals out. Breakfast with the family (a morning “off” for Mom!) and dinner with my husband while down in SLC.
Breakfast:
At Squatters (PC)
Omelette with peppers, ham and avocado
Side of fruit instead of toast
(Hold the hash browns)
Black coffee
Snack 1:
Homemade trail mix (raw almonds, raw walnuts, raw macadamia nuts, raw pumpkin seeds, unsweetened dried cherries, unsweetened dried blueberries, unsweetened dried coconut flakes)
Lunch:
Leftover “Shannon’s Spaghetti” sauce (no “spaghetti” squash)
Leftover steamed broccolini
Snack 2:
Raw celery, peppers and cherry tomatoes with Walnut Red Pepper Dip (Sarah Fragoso, Everyday Paleo)

Dinner:
Out at Porcupine (SLC)
Full house salad with grilled shrimp and chicken
“fire dried pecans” (salty), pear, red onion, mandarin oranges
(Hold the cheese, no dressing)
Our kids were home for dinner and had:
Enchiladas
Organic corn tortillas with shredded chicken, salsa, red onion, shredded raw cheddar cheese
With avocado, grape tomatoes and black olives on the side
