Apple Sage Butternut Squash

  • 1 medium butternut squash, peeled, seeded and cubed into ¾" pieces
  • 3 apples, cored and chopped into ¼" pieces
  • 1 large fennel bulb, cored and sliced into ¼" strips
  • ½ cup fresh sage, minced
  • 2 tbsp. coconut oil, melted
  • 1 tsp. sea salt
  • ½ tsp. black pepper
  1. Preheat oven to 425ºF.
  2. Toss squash, apple and fennel with coconut oil. Lay evenly on a parchment lined baking sheet.
  3. Sprinkle sage, salt and pepper over the top.
  4. Roast for 30 minutes, or until lightly browned and tender.
  5. Remove from oven and enjoy!
