- 1 avocado, halved and pit removed
- 1 can tuna, wild caught
- 1/4 cup diced apple
- 1/4 cup grape tomatoes, halved
- 1/4 cup diced red bell pepper
- 2 tbsp. finely diced celery
- 2 tbsp. chopped green onion
- 2 tbsp. extra virgin olive oil
- 1 tbsp. lemon juice
- 2 tsp. lemon zest
- Salt and pepper to taste
- Drain tuna and fluff with a fork.
- Add all ingredients, except avocado to a medium size bowl and mix.
- Scoop mixture into each avocado half.
