Curious Cobb Jar Salad with Homemade Vinaigrette

Ingredients

Dressing:

  • 2 1/2 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar reserve
  • 1 clove garlic, minced
  • 1/4 tsp Herbs de Provence
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper

Salad:

  • 1/4 cup chopped red onion
  • 8 cherry tomatoes
  • 1/2 cup chopped cucumber
  • 1/3 cup green olives
  • 2 hardboiled eggs, sliced
  • Small handful of chopped peppered salami
  • 1/2 avocado, chopped
  • 1 1/2 oz chopped cheddar cheese
  • 1 Tbsp sunflower seeds
  • Chopped Romaine lettuce, to fill

Instructions

  1. Whisk together dressing ingredients and add to the bottom of a quart sized mason jar.
  2. Add onion, cherry tomatoes, cucumber, olives, hardboiled egg, salami, avocado, cheese, and sunflower seeds in layers.
  3. Fill the rest of the jar with Romaine lettuce.
  4. Add a lid.
  5. When you are ready to eat, simple shake and eat, or empty jar on a plate and enjoy.
