I feel like a “My Plate” post is WAY overdue! Just another glimpse into a day of what I eat for those of you who find it helpful to plan your own meals or gather ideas. Nothing fancy! I’m often just trying to “survive” the daily hustle, while fueling with the best foods I can to help me “thrive.”

Breakfast:
Leftover Primal Chili topped with diced avocado and sliced olives. Remember to think outside the box when it comes to breakfast. This was DELICIOUS on a cool morning. Nourishing, comforting and QUICK, all at the same time.
My kids had Applegate Farm’s chicken apple sausage, spinach, avocado, and strawberries.
Lunch:
I had the treat of joining some girlfriends out for lunch on this day. Clean food and great company makes for a special meal.
• Homemade chicken soup (gluten-free)
• Kale and berry salad with shrimp, almonds, and arugula
Dinner:
For dinner I made a quick and tasty salmon chowder (recipe to come on the blog soon). Wild caught salmon, veggies and a coconut based broth was just what I needed at the end of the day.
Always bringing it back to the basic concepts: good quality meats, lots of fresh vegetables and natural fats. Satisfying mind and body alike.
