I’ve been diving into my new paleo cookbooks this past week and here are a couple thumbs up recommendations!
1) Proscuitto & Fig Salad
Now, I got the idea for my version of this salad from Beyond Bacon by Stacy Toth and Matthew McCarry (available here; however, I did change things up a bit. Not because I felt that the recipe in Beyond Bacon (available here/a> needed to be messed with, but because I had a vision. I quartered and roasted fresh figs and then wrapped them in thin slices of proscuitto. I then topped these tasty morsels on organic mixed greens with organic blackberries and raw pumpkin seeds. Drizzled with a touch of olive oil and balsamic vinegar, it was a definite hit! This particular dish was served with grass-fed burgers, fresh guacamole, roasted carrots with fresh parsley and grilled portabello mushrooms. A•M•A•Z•I•N•G!
2) Maple Banana Spice Bread
Can anyone guess what occurred in the above three photos?!!!
That’s right: A “Maple Banana Spice Bread” THIEF mid photo shoot!!! It turned out to be my three year old son – quick as a FLASH. And in all honesty, I can’t blame him! The sweet clove and cinnamon smell, along with the moist, golden brown appearance, made it hard to focus on the camera myself. A delicious treat for sure. Thanks Primal Cravings!
