My son is celebrating St. Patrick’s Day at school today, so I thought it would be fun to send him with a “green” lunch. I wasn’t fully prepared, but managed to pull together quite a few items. Before heading out the door, I told him to let me know how many green foods he could count in his lunch box when I pick him up later:)
School Lunch:
• Shrimp
• Leftover bacon wrapped chicken thighs
• Quick guacamole for dipping (mashed avocado, lemon juice, sea salt, lemon pepper)
• Leftover roasted asparagus
• Sliced green peppers
• Pistachios
• Applesauce “SqueeZ”
• Homemade paleo chocolate chip cookie (from Uncle Kenny)
